2 lb. Loaf Recipe:
  • ½ cup buttermilk
  • 1 tablespoon oil
  • ½ cup grated zucchini
  • 2 tablespoons onion, grated
  • ¼ cup red pepper, chopped
  • 2 tablespoons Romano cheese, grated
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • ½ teaspoon lemon pepper
  • ½ cup oatmeal
  • 2½ cups bread flour
  • 2¼ teaspoons yeast (1 packet)
1.5 lb. Loaf Recipe:
  • ⅔ cup buttermilk
  • 2 tablespoon oil
  • ¾ cup grated zucchini
  • 3 tablespoons onion, grated
  • ⅓ cup red pepper, chopped
  • 3 tablespoons Romano cheese, grated
  • 3 tablespoons sugar
  • 1 ½ teaspoon salt
  • ¾ teaspoon lemon pepper
  • ⅔ cup oatmeal
  • 3 ¼ cups bread flour
  • 1 tablespoons yeast
  1. Gather all you ingredients together and chop up all the veg as described in the ingredients list. Turn on your bread maker and place all the ingredients into the pan as listed.
  2. You should select the basic or white bread option with a medium or normal crust. Leave the bread to knead for 5 minutes, and then you need to lift the lid to check the dough’s consistency. If it is a stiff ball, then you will need to add water, one tablespoon at a time; on the other hand if it is too wet, then add one tablespoon of flour. Once the consistency is as it should be, set the bread machine kneading again and wait until the bread is cooked.
  3. When the bread machine dings, you know that it is ready and you can remove the bread. Place it on a cooling rack to cool, being careful not to burn yourself.
Tips and Suggestions – This recipe is so versatile that you can really make it your own. For a low fat version then you can replace the buttermilk with low fat milk, remove the cheese and alternate the bread flour for whole-wheat flour. Zucchini goes so well with so many ingredients. You can add walnuts or pecans, vanilla flavoring or applesauce. It is fun experimenting with this recipe and making it your own. This is a great way to use up all the left over zucchini and even tastes great when the zucchini is out of season!
