Multigrain Bread Machine Recipe

2 lb. Loaf Recipe
  • 1 cup water
  • 2 tablespoons canola oil
  • 2 egg yolks
  • ¼ cup molasses
  • 1 teaspoon salt
  • 1½ cups bread flour
  • 1 cup whole wheat flour
  • ½ cup rye flour
  • ½ cup nonfat dry milk powder
  • ¼ cup quick cooking oats
  • ¼ cup toasted wheat germ
  • ¼ cup cornmeal
  • 2¼ teaspoons active dry yeast
1.5 lb. Loaf Recipe
  • ¾ cup water
  • 1½ tablespoons canola oil
  • 1½ egg yolks
  • 4 tablespoons molasses
  • ¾ teaspoon of salt
  • 1 cup bread flour
  • ¾ cup whole wheat flour
  • ⅓ cup rye flour
  • ⅓ cup nonfat dry milk powder
  • 4 tablespoons quick cooking oats
  • 4 tablespoons toasted wheat germ
  • 4 tablespoons cornmeal
  • 1⅔ teaspoons active dry yeast
  1. After ensuring that all of your bread making equipment is cleaned and ready to go, mix all the dry ingredients first and slowly stir in the liquid ones. As this tends to be a very hearty loaf of bread, you will want to select “Wheat” on your bread machine settings to ensure that all the ingredients baked together and that the yeast has the best chance to rise properly.
  2. After the recommended baking time has elapsed, carefully remove the fresh loaf from the machine and place it in a dry, well ventilated area to cool. However, this bread is much better while still warm so invite the people closest to you and enjoy!
Tips and Suggestions - the best thing about this recipe is its flexibility. When experimenting with different grains, don't be afraid to think outside the box. Sunflower pumpkin seeds can be a very welcome addition to this recipe as well is your favorite dried fruits.     I agree with Jon — Excellent!!! I had trouble with the 1.5 loaf, but after recalculating the recipe based on the 2 lb loaf, it turned out fantastic! I make it with toasted sunflower seeds and again it’s great! Thanks
