2 lb. Loaf Recipe
  • 2 cups rice flour
  • ½ cup potato starch
  • ½ cup pudding of your choice (tapioca tends to work best)
  • 2½ teaspoons guar gum
  • ⅔ cup dry milk
  • ½ teaspoons salt
  • ½ teaspoons egg substitute
  • 3 tablespoons white sugar
  • 1⅔ cups water (room temperature)
  • ½ teaspoons bread maker yeast
  • 4 tablespoons margarine or butter
  • 1 teaspoon dough enhancer
  • 3 eggs
1.5 lb. Loaf Recipe
  • 1½ cups rice flour
  • ⅓ cup potato starch
  • ⅓ cup pudding of your choice (tapioca is best)
  • 2 teaspoons guar gum
  • ⅓ teaspoon salt
  • ⅓ teaspoon egg substitute
  • 2 tablespoons white sugar
  • 1¼ cups room temperature water
  • ⅓ teaspoon bread maker yeast
  • 3 tablespoons margarine or butter
  • ⅔ teaspoon dough enhancer
  • 2 eggs
  1. It is a good idea when using a bread machine you will always want to start mixing the yeast and sugar in a small bowl as you are mixing the other items, add the yeast and sugar slowly. Watch for bubbles and foam, this shows that the ingredients are reacting with one another properly.
  2. Next you will want to go through and mix the flour, baking gum and salt and stir well. Combine Eggs oil and vinegar in another bowl, mixing well. When the yeast mix is foaming add all ingredients together and mix on low 4 minutes.
  3. You want to use an hour and 20 minutes on your machine. This allows for twenty minutes of kneading and the rest for baking, rising and ‘setting’. This is a great way to introduce healthy eating in to your home. It’s not just a fad anymore, it’s a lifestyle. Bread is a terrific way to start that new lifestyle. Add fun and ‘popping’ flavors to bring out extra spice in the bread.

Tips and Suggestions - this bread is ideal for people who are watching their health but do not want to compromise too much on flavor of their food. It has been suggested that a little bit of linseed oil and/or sunflower seeds during the initial mixing of the dough as a very wholesome flavor to the bread. Just remember that eating healthy doesn't necessarily mean boring food, and this great loaf of bread is proof of that.
