Jewish Rye Bread Machine Recipe

  • 1⅔ cup water
  • 2 teaspoon salt
  • 1⅓ Tablespoon sugar
  • 3 cups white flour
  • 1⅓ cup rye flour
  • 1⅓ Tablespoon olive oil
  • 1⅓ Tablespoon caraway seeds
  • ⅔ cup chopped onions (optional)
  • 3 teaspoons commercial yeast

  • 1½ teaspoon salt
  • 1 Tablespoon sugar
  • 2 cups white flour
  • 1 cup rye flour
  • 1 Tablespoon olive oil
  • 1 Tablespoon caraway seeds
  • ¼ cup chopped onions (optional)
  • 2 teaspoons commercial yeast
  1. Begin by placing the ingredients in the bread machine in the order they are listed in this recipe. Put the machine on "rise only" or the pizza dough cycle.
  2. After the first rise you must remove the dough, place on a surface and punch down. You will get a feel for the consistency and if it is too sticky add some flour.
  3. Now preheat the oven to 450 f. If you are using a bread pan then shape the loaf and place it into the oiled bread pan. Alternatively shape the dough as desired and place on an oiled baking tray. Once in the baking tin a sharp knife to slice lines into the top of the bread. Now you will need to cover the dough with a tea towel and leave it to rise until it has doubled in size.
  4. For an extra crusty loaf you should spray the walls of the oven with water before putting the loaf in to bake.
Tips and suggestions - For lighter bread, use half a cup of whole-wheat flour and two and a half cups of white flour. Another nice addition is after the first rise to dust the bread with sesame or poppy seeds. To obtain a shiny crust you could make a solution of 1 tablespoon of cornstarch to ½ cup of cold water. Heat it in your microwave or on the stovetop, stirring occasionally, until it thickens. Brush this solution onto the loaf just before slashing the top.
