  • ¼ cup instant milk powder
  • 1½ teaspoon salt
  • 3 tablespoons packed brown sugar
  • 2 tablespoon walnut or olive oil
  • ¾ cup bread flour
  • 1 cup walnuts broken into pieces
  • 1½ teaspoon bread machine yeast
  1. First make sure your bread machine is properly assembled and in working order. The utensils you will be making use of in this recipe will be the bread machine’s baking pan, dough pen and kneading paddles.
  2. Next place the ingredients into the bread maker’s baking pan in the order specified for your particular machine. You will find the instructions in the manufacturer’s handbook.
  3. When all the ingredients are in the baking pan you can close the lid and select the mix button. After ten or fifteen minutes lift the lid of the machine to inspect the mixture. Dip a spoon in and decide whether the dough is too wet or too dry. If it is either of these then add water or flour to create the right consistency. If you had to add anything, knead for a minute longer.
  4. In this recipe you should use the bread machine for kneading but you can actually bake the bread in the oven for a better result. Once removed from the machine shape the dough into a circle and place it onto a greased baking sheet. You can cover it with a damp tea towel and leave to prove until it doubles in size.
  5. Then it should be baked at 190°C or 375°F for approximately 30 minutes. Once cooked, leave to cool.
Tips and Suggestions: This is a great bread to have with a cheese board at dinner parties. The walnuts go beautifully with cheese and chutney. To make it look pretty on the dinner table you can cut a deep cross into the top of the loaf before baking and decorate it with walnuts. Another top tip for walnut bread is to add oats to the recipe for a hearty breakfast loaf!
