  • 1½ cups warm water
  • 2 tablespoons vegetable oil
  • ½ cup molasses
  • 4 tablespoons cocoa
  • 1¼ tablespoon caraway seed (optional)
  • 2 teaspoons salt
  • 2 cups bread flour
  • 1¼ cups rye flour
  • 1¼ cups whole wheat flour
  • 2 tablespoons vital wheat gluten
  • 1⅔ teaspoons bread machine yeast

  • 1⅛ cups warm water
  • 1½ tablespoons vegetable oil
  • ⅓ cup molasses
  • 3 tablespoons cocoa
  • 1 tablespoon caraway seed (optional)
  • 1½ teaspoons salt
  • 1½ cups bread flour
  • 1 cup rye flour
  • 1 cup whole wheat flour
  • 1½ tablespoons vital wheat gluten (optional)
  • 2½ teaspoons bread machine yeast
  1. Clean and gather all of your utensils. Check that all of your cooking surfaces are clean. Gather all of your ingredients in a convenient place and make sure that your bread machine in properly assembled.
  2. Add the ingredients, in the order that they are listed or recommended by your manufacturer, to the bread pan of your machine. Always remember that when you are adding yeast as the last ingredient, you should make a well or indentation for the yeast to be placed in. The goal behind this is to keep the yeast dry until the right time.
  3. Select the Basic cycle and press start. If you want to check your dough, don’t be fearful of opening the lid to do so. If the dough seems to wet, you can add flour by the tablespoon. If it’s too sticky, do the same with water.
  4. The machine will knead, rise and bake the bread. When it is finished, place it on a cooling rack. Let the bread stand for at least 10 minutes before slicing.
