Banana Bread Machine Recipe

  • 2 teaspoons active dry yeast
  • 1 cup oats
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 1 tablespoon butter
  • 1 tablespoon dry milk powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 2 cups sliced ripe bananas
  • 1 egg
  • ¼ cup sour cream

  • 1½ teaspoons active dry yeast
  • ¾ cup oats
  • 1½ cups bread flour
  • ¾ cups whole wheat flour
  • ¾ tablespoon butter
  • ¾ tablespoon dry milk powder
  • ⅓ teaspoon cinnamon
  • Dash of nutmeg
  • ½ tablespoons honey
  • ¾ teaspoon of salt
  • ½ cup sliced ripe bananas
  • 1 egg
  • 4 tablespoons sour cream
  1. Add the above ingredients, one at a time while slowly stirring the mixture with each addition. When properly mixed, use a spatula to create a loaf shape that will fit best in your machine. This is a loaf that you will want to cook slowly and also ensure that you have a light coloration on the crust. For this, adjust your bread maker settings to "Golden" and set the timer for approximately 1 hour 30 mins. If you resist the temptation that the subsequent smell will present to you long enough for it to bake, you will be rewarded with a very moist and flavorful banana bread that would make your grandmother proud.
  2. When the bread is finished baking, carefully remove it from your bread machine and serve warm. Banana bread can be kept for up to two weeks wrapped in foil, and they make excellent holiday gifts.
Tips and Suggestions - The addition of ¼ to ½ teaspoon of vanilla in the ingredients can make for a very pleasant "banana cream" flavor in the finished loaf. Also, the addition of dried fruits such as raisins or cranberries is quite common in the northeastern United States and is quite tasty.
