English Muffin Bread Machine Recipe

2 lb. Loaf Recipe:
  • 1½ cup warm water
  • 3 teaspoons sugar
  • 1⅓ teaspoon salt
  • ⅓ teaspoon baking soda
  • 4 ¼ cups bread flour – white
  • 4 ¼ tablespoons nonfat dry milk
  • 3 teaspoons active dry yeast
1.5 lb. Loaf Recipe
  • 1⅛ cup warm water
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • ¼ teaspoon baking soda
  • 3 cups bread flour – white
  • 3 tablespoons nonfat dry milk
  • 2 teaspoons active dry yeast
  1. To start fill the bread maker with all the ingredients, putting each one in, one at a time in the order listed above. Now turn on the dough cycle. If there appears to be a delay do not worry, the machine may need to preheat for about 10 minutes. Now you are able to set the desired crust setting. For the English muffin loaf you should set it at “light” or “generic” which will give a light golden coloration.
  2. After ten minutes of mixing has passed you need to open the lid and stop the mixing. Make use of a wooden spoon to test the dough. If it is overly wet it is time to add 1 tsp of flour until the desired consistency is achieved. Too dry, do the same with water.
  3. Once the dough is ready you need to set the bread machine to a ‘basic bread machine’ setting. Once the loaf is ready you must remove is and let it cool on the cooling rack. The top of the loaf may come out sunken but don’t worry this is normal in this recipe.
Tips and Suggestions – Use the English muffins to make eggs benedict for breakfast. You can make eggs benedict by poaching two eggs, and serving them on a toasted muffin complimented with hollandaise sauce. Try adding bacon for a slightly higher calorie breakfast.
