Combining the sweet decadence of a cinnamon roll with the toned down wholesomeness of white bread, this scrumptious blast from our past is once again available to us, freshly made in our own bread machines!

2 lb. Loaf Recipe
  • 1 cup plus 2 tablespoons water
  • 2 tablespoons butter (soft)
  • 3 cups bread flour
  • 3 tablespoons sugar
  • 1½ teaspoons salt
  • 1 teaspoons ground cinnamon
  • 2½ teaspoons of bread machine yeast
  • ¾ cup raisins

  • ¾ cup plus 1 tablespoons water
  • 1 tablespoons butter (soft)
  • 2 cups bread flour
  • 3 tablespoons sugar
  • 1½ teaspoons salt
  • 1 teaspoons ground cinnamon
  • 1½ teaspoons of bread machine yeast
  • ½ cup raisins
  1. Because this could be classified as sweet bread, we want to take extra special care not to burn the active ingredients. There is a fine line between caramelization and char, so we want to be absolutely sure that we watch our timing perfectly with this particular recipe. So as you are gathering all the components, you want to make sure that the setting on your bread machine corresponds to either "light" or "generic" to make absolutely sure no one gets that horrible burnt raisin taste when they bite into it.
  2. When your machine is completely prepared, add the ingredients in order according to the list above. And you want to add everything with the exception of the raisins, these will be added to ring the last knead cycle in the bread machine. When all the ingredients have been mixed properly in the baking bowl, close the lid and press the button that corresponds with the mixing option. Also, be prepared for at least a 10 min. preheat phase for your machine to prepare itself.
  3. Let it makes for about 10 min. and then open up the lid to cease the mixing process. If the dough is satisfactory, and has a correct consistency, go ahead and add the raisins and let it mix for another 1 to 2 min. When this process is finished, select the “Sweet Bread” cycle, set the timer amount that's appropriate to the weight of the loaf and let the bread machine do its magic. And once this loaf begins cooking in earnest, the smell in your house will probably be attracting neighbors from blocks away. When it is finished, take it out and let it cool in an open area until it is ready to be eaten.
- With a bread like this, as with most sweetbreads, the possibilities of adding your own custom flair to the existing recipe is limited only by your imagination. The basic rule of thumb is to stick within the proportions of the other ingredients, and to be sure to add your liquid ingredients last in the mixing process to avoid interfering with the yeast allowing the bread to rise. However, adding a bit of extra cinnamon and sugar will go a long way to please the younger crowd. Adding a few walnuts and/or maple syrup is quite a common way to spruce this childhood favorite up as well.
