Ingredients
2 lb Loaf Recipe:
  • 2cups all-purpose flour
  • 1 ¼ teaspoon baking soda
  • ⅔ teaspoon salt
  • ⅔ teaspoon ground cinnamon
  • ⅔ teaspoon ground cloves
  • ⅔ teaspoon ground nutmeg
  • ⅔ teaspoon ground allspice
  • ⅓ teaspoon ground ginger
  • 1 1 /3 cup butternut squash puree
  • 1⅓ cup granulated sugar
  • ⅔ cup vegetable oil/olive oil
  • 3 large eggs, beaten
  • ⅓ cup water
  • ⅔ cup toasted pecan nuts, chopped
1.5 lb. Loaf Recipe:
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground allspice
  • ¼ teaspoon ground ginger
  • 1 cup butternut squash puree
  • 1 cup granulated sugar
  • ½ cup vegetable oil/olive oil
  • 2 large eggs, beaten
  • ¼ cup water
  • ½ cup toasted pecan nuts, chopped
Instructions
  1. First things first, you must make the Butternut Squash puree. To do this cut the squash in half and remove all the seeds. Now place the halves cut side down on a baking sheet. Bake them at 350 degrees F. for at least 45 minutes until the squash is soft. Now remove them from the oven and allow cooling. Next scoop out the cooked inner pulp and discard the skin. Place the pulp into a blender or food processor and mix until smooth.
  2. Now get your machine ready to go. It is best to follow the guidelines for your bread maker in regard to the order of loading ingredients. Usually the correct method is to put the liquids in first and then the dry ingredients. Once the ingredients are loaded you should select “light” for the crust and start the machine mixing.
  3. After ten minutes check the mixture’s consistency. If too wet add flour, if to dry add water a tablespoon at a time. Then set the machine to knead for a minute longer. Once the dough is kneaded you can choose the 'basic bread' function and press start. You should use a wire rack to cool the bread once it has finished in the machine.
Notes
Tips and Suggestions – At Halloween switch the butternut squash for pumpkin. This bread also goes down well if a tablespoon full of honey is added in with the other ingredients.

    OK, how much yeast are we suppose to put in here?! Made the whole recipe & noticed there was no yeast, so now I guess I’ll just look at other recipes to guess the amount.
