1.5 Loaf Recipe
  • ¾ cup vital wheat gluten
  • ⅛ cup almond flour
  • ⅛ cup wheat protein isolate
  • ⅛ cup oat flour
  • ⅛ cup flaxseed meal
  • 1 tablespoon unprocessed wheat bran
  • 1¼ teaspoon baking powder
  • ⅛ teaspoon salt
  • 1½ tablespoons no calorie sweetener
  • ¾ cup warm water
  • 1½ teaspoon sugar
  • 2¼ tablespoons oil
  • 2 eggs room temperature
  • 1½ packages rapid rise, dry active yeast
  1. Clean all of your cooking surfaces and utensils before you begin this project. Place all of your ingredients within reach for convenience. Have your cooking rack nearby.
  2. Start by combining all of your dry ingredients, aside from the sugar and yeast, in a bowl. In your bread pan, blend the water, sugar, oil and eggs. These wet ingredients should go in the bottom of the bread pan. Spread the dry ingredients over the wet ingredients, covering them completely. Add the sugar to the pan. With your fingers, make a well and pour the yeast into the pan. The bread machine will mix the yeast in and activate it.
  3. Select the White or Basic cycle and choose the crust color that you desire. When the bead is finished baking, move it to the cooling rack.

Question… I have a jar of Bread Machine yeast in my fridge so how much of that can I use in place of the 2 pkgs of rapid rise yeast?

  2. Tony says:

Did not even rise to the top of my bread pan for the 2 lb on a zojirushi and the dough is like wet oatmeal. Something seriously wrong with this.

Noting 9 carbs without listing the dietary fiber count is a problem. I am looking for net 5 carbs (or less) (# carbs – # dietary fiber = net carbs).

Can you tell me # dietary fiber content ??

Where can I find wheat protein isolate? I have looked in every store I could find that has bread baking supplies.

Hi made this very succesfully and added about 1 tbs of fine psyllium pwd and about the same of coconut flour as the mix was too wet in the bread machine, instead of wheat protein isolate I used pea protein and about double quantity for the same reason as above to get the consistency right as it was kneading. I then added about 2tbs extra coconut oil so it didnt stick whilst kneading. The results were great. It is cooling now so not sure how it will be in the middle, but it rose beautifully and is crusty and toasty on the outside
