2 lb. Loaf Recipe
  • 1½ cups all-purpose flour
  • ⅔ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoons salt
  • ⅓ cup vegetable oil
  • 2 extra-large eggs, lightly beaten
  • ¼ cup sour cream
  • 1 teaspoon vanilla flavoring
  • ⅔ cup mashed bananas
  • ⅓ cup chopped pecans

  • 1 cup all-purpose flour
  • ½ cup sugar
  • ¾ teaspoon of baking powder
  • ⅓ teaspoon baking soda
  • ⅓ teaspoon salt
  • ¼ cup vegetable oil
  • 1 extra-large egg, lightly beaten
  • 4 tablespoons sour cream
  • three-quarter teaspoon vanilla flavoring
  • ½ cup mashed bananas
  • ¼ cup chopped pecans
  1. This recipe should be followed about as closely as the two previous ones for banana bread. However, the addition of sour cream along with the pecans and this one makes for a very moist and succulent loaf that will have that extra "something" that people might not readily be able to identify but will take it over the top.
  2. Make sure that your bread machine is cleaned and properly prepared, and that all of your ingredients are all in one place and organized. As with other banana bread recipes, make sure the settings on your bread machine reflect the "whole wheat" setting. This will be thicker bread, and therefore needs this setting to ensure that it is baked all the way through.
  3. Although kneading isn't critical with banana bread as the individual ingredients lend their own unique texture to the recipe, a good 5 min. kneading cycle will make for a fluffier and lighter loaf when it is finished. When satisfied with the dough, set the timer on your bread machine to approximately an hour and a half and monitor it closely to be sure that it does not burn.
  4. When the timer indicates that the bread is finished, carefully remove it from the bread machine, slice it to your desired thickness, and serve warm. The pecans in this recipe lend for a very earthy and robust taste that is not seen with regular walnuts. There is a good chance this poor loaf will not last an hour in your kitchen with your family resisting the urge to eat it out of the bread machine itself as it is baking.
Tips and Suggestions – This particular recipe is more common in the southeastern United States and therefore is often times served with other Southern staples such as fried apples. For those who are adventurous, substituting macadamia nuts for pecans will create a very interesting texture and taste to this already scrumptious banana bread.
