2 lb. Loaf Recipe
  • ½ cup sugar
  • ½ cup packed brown sugar
  • ½ cup milk
  • ⅜ cup margarine
  • 1 egg
  • 1½ very ripe mashed bananas
  • ½ teaspoon grated orange rind
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla flavoring
  • ½teaspoon butter flavoring
  • ½ cup chopped nuts (walnuts or pecans)
1.5 lb. Loaf Recipe
  • ⅓ cup sugar
  • ⅓ cup packed brown sugar
  • ⅓ cup milk
  • ¼ cup margarine
  • 1 egg
  • 1 cup very ripe mashed bananas
  • ⅓ teaspoon grated orange rind
  • ¾ teaspoon baking powder
  • ⅓ teaspoon vanilla flavoring
  • ⅓ teaspoon butter flavoring
  • ⅓ cup chopped nuts (walnuts or pecans)
  1. To begin with, make sure that your bread machine is clean and up and running and that all ingredients are gathered in one place. Peel the bananas and shell any nuts that may not already be.
  2. Mix all of the dry ingredients together first and you can even use a sifter for more efficient mixing during this step. Then slowly add in the liquid ingredients, stirring gently as each one is added to the mixing bowl. Add in smashed banana last and mix well to ensure that it is uniformly mixed throughout the dough. This can either be done by hand or through the use of the kitchen mixer.
  3. Although kneading the dough isn't entirely necessary as this is more of a pastry than traditional bread, a good 5 min. of kneading would certainly do no harm and would allow for a softer, moister end result.
  4. Pour the mixture into the bread machine and set the timer for a tentative hour and a half. Depending on your individual bread machine, this time may be more or less depending on the documentation included with the device.
  5. When it has finished baking, or you simply decide that you can't resist the smell anymore, remove the warm fresh loaf from the bread machine and try to serve as hot as possible. This banana bread recipe makes for a very sweet and decadent loaf that is sure to disappear faster than it was baked.
Tips and Suggestions - the recipe included here could also be utilized for banana nut muffins. The only real substitution being muffin tins and/or cupcake holders, as opposed to using the bread machine. Also these loaves of banana nut bread make great gifts and can keep for some time while wrapped in foil.
