While he ate he exclaimed “Anna, ‘darn’ her”. It is dark yeast, dense bread that is easy to make in the bread machine. Here we have the recipe for 2 pound loaf and a 1 ½ pound loaf.

2 lb. Load Recipe:
  • 1⅛ cup of water
  • ⅓ cup molasses
  • 1 ½ tablespoons butter
  • 1 teaspoon salt
  • ⅓ cup yellow cornmeal
  • 3 ½ cups bread flour
  • 2 ½ teaspoons yeast
1.5 lb. Loaf Recipe:
  • 1 cup of water
  • ¼ cup molasses
  • 1 tablespoons butter
  • ¾ teaspoon salt
  • ¼ cup yellow cornmeal
  • 3 cups bread flour
  • 2 teaspoons yeast
  1. Get your machine is set up and ready to go. Once you have gathered all the ingredients you can begin.
  2. Before putting any ingredients in the machine you need to combine half a cup water and cornmeal. Bring another cup of water and salt to the boil in a saucepan. Then add the cornmeal mixture, and cook for 2 minutes. Now stir in the molasses and oil; take off the heat and allow to cool.
  3. It is best to follow the guidelines for your bread machine regarding order of loading ingredients. Usually the method is to put the liquids in first and then follow with the dry ingredients. Once the ingredients are in the machine select “light” for the crust and press the knead button.
  4. After ten or fifteen minutes open the bread maker to inspect the mixture and decide whether the dough is too wet or too dry. If it is then add water or flour to form the right consistency. If you needed to add anything, set the machine to knead for a minute longer.
  5. Set the machine to bake, once ready take it out and allow it time to cool.
Tips and Suggestions - Anadama bread freezes very well so you can prepare some in advance and freeze for later. A great way to enjoy anadama bread is buy having it warm with butter and cinnamon.
